BLUEBERRY GRANOLA
MUFFINS
with Banner Road Granola

Ingredients list:

2 cups unbleached flour
-
1 cup Banner Road Bye Bye Blues granola, slightly
-
3/4 cup sugar
-
2 T baking powder
-
1/2 t salt
-
1/2 cup canola or olive oil
-
2 Phil's Large Brown Omega 3 Eggs

1 1/4 cup Oberweis milk
-
1 1/2 cups fresh or frozen blueberries

Crumb Topping: 4 T cold Oberweis butter, cut in chunks

1/2 cup flour
-
1 cup Banner Road Bye Bye Blues granola

1/2 cup light brown sugar

1/4 t cinnamon

1/4 t salt

Preheat oven to 350 degrees.

Prepare the crumb topping by placing all ingredients in a food processor and pulsing intermittently until small clumps form. Set aside.

Combine all dry ingredients in a mixing bowl.

Combine olive oil, eggs and milk and whisk until combined

Add dry ingredients to mixture and stir until just combined. Do not overtax.

Fold in blueberries and spoon mixture into greased or paper lined muffin tins until 2/3 full.

Top with crumb mixture and bake for 20 to 25 minutes or until golden brown.

Let cool slightly and remove from pan. Makes 12-15 standard muffins. Store in an airtight container.
