CREAMY CILANTRO LIME
TACO CHICKEN SALAD
with Wildtree Taco Seasoning

1/2 cup Oberweis sour cream

1/4 cup chopped cilantro

2 tbsp. lime juice

3 tbsp. Oberweis milk

1 (15.5 ounce) can black beans drained and rinsed

1 (8 ounce) can corn drained
-
1/2 red onion finely diced
-
1 red bell pepper diced
-
1/4 cup chopped cilantro

2 romaine hearts chopped
-
2 tbsp. lime juice

1/2 pound Koch boneless skinless chicken breasts

1 tbsp. Wildtree taco seasoning

Olive oil

TOPPINGS:

Oberweis block cheddar cheese, grated

Diced tomatoes

Dressing: Prepare dressing by whisking together these ingredients. Set aside. • 1/2 cup Oberweis sour cream • 1/4 cup chopped cilantro • 2 tbsp. lime juice • 2 tsp. Wildtree taco seasoning • 3 tbsp. Oberweis milk

Salad: Toss together these ingredients. Set aside. • One 15.5 oz can black beans, drained and rinsed • 1 (8 ounce) can corn drained • 1/2 red onion finely diced • 1 red bell pepper diced • 1/4 cup chopped cilantro • 2 tbsp. lime juice

Chicken: Pound thawed chicken breasts to 1/2-inch thickness. Coat chicken breasts with oil and season with Wildtree taco seasoning. Heat a 10" nonstick skillet over medium heat. Add chicken breasts and cook for about 5 minutes on each side or until cooked through: 165°F. Transfer to a cutting board to rest. Slice. • 2 Koch Foods boneless skinless chicken breasts • 1 tbsp. Serve sliced chicken over romaine. Top with bean mixture. Serve with prepared dressing.
